Amboy is located on the junction of Highway 169 & 30, nineteen miles south of Mankato and fifteen miles north of Blue Earth. Amboy is a city in Blue Earth County, Minnesota. According to the United States Census Bureau, the city has a total area of 0.31 square miles (0.80 km²), all of it land. U.S. Route 169 and Minnesota State Highway 30 are two of the main routes in the community. The elevation is 1,043 feet (318 m).

As of the census of 2020, there were 535 people, 235 households, and 159 families residing in the city. The population density was 1,725.8 inhabitants per square mile. There were 245 housing units at an average density of 790.3 per square mile. The racial makeup of the city was 90.8% White, 0.6% African American, 0.0% Native American, 0.2% Asian, 0.6% from other races, and 7.7% from two or more races. Hispanic or Latino of any race were 4.1% of the population.
There were 235 households of which 27.2% had children under the age of 18 living with them, 52.8% were married couples living together, 22.1% had a female householder with no husband present, 19.1% had a male householder with no wife present, and 32.3% were non-families. x% of all households were made up of individuals and 20.7% had someone living alone who was 65 years of age or older. The average household size was 2.28 and the average family size was 2.97.
The median age in the city was 41.2 years. 24.7% of residents were under the age of 18; 5.5% were between the ages of 18 and 24; 26.8% were from 25 to 44; 22.3% were from 45 to 64; and 20.7% were 65 years of age or older. The gender makeup of the city was 47.9% male and 52.1% female.
The median household income was $49,423. The poverty rate was 17.4%. 14.2% of residents had a bachelors degree or higher. The median rent was $694 and 79.6% owned their homes. The average value of a housing unit was $90,8000.

Amboy Days Festival 2nd Weekend in September This festival is a project of the Amboy Community Club whose mission is to provide social, cultural, and environmental contributions to the Amboy area. Each year our organization puts on a festival called the “Arts 'n More Festival” whose purpose is to stimulate the practice and appreciation of a wide variety of arts and music in our local community of Amboy, Minnesota. This year the festival will focus on the art of dance.
